Caserita!!! Donde esta el mojo???

Just a note to tell you all that blogging will be pretty light tomorrow. Steve and I are refining our lechonero faculties and will be roasting a smalll lechoncito for a small group of family.

On the menu for tomorrow's culinary debauchery will be a small, 40 lb, lechoncito stuffed with congris Oriental. I think Tommy, the official ManCamp™ drunken photographer, will be making some cajun angels, and Steve is bringing some home made brew and a strawberry shortcake.

If I havent consumed to many beers by the time the old porker is done, Ill try to post a few pictures, pa' jode' na' mas.

Venezuela: toothless reporters ignore Chavez murders of four students

Four students were murdered by Chavez police about four days ago. Yet this news seems almost unreported in the US (and I have searched for it) the only source carrying it is EL Nuevo Herald (Miami). Perhaps this is not news since these killings are only a few of the over 3,000 police killing done during the Chavez era. Meanwhile, one can expect, given Chavez's propensities for this kind of bloody coverup, that the two surviving and wounded students will somehow die so they cannot testify.

This is a Cuban (and politically incorrect named) dessert that I would serve to my Fourth of July guests, inspired by the postings under Vulgar Cubanism. That's to have cojones cuadrados!

Mojon de Negro o Coquito Quemado

Grate some coconut flesh in fine shreds (of one or two coconuts)
Combine it with a heavy brown sugar syrup, to make a workable mass. Reserve some of the syrup aside, for final coating.
Add some dark rum to the mixture, to taste. If you prefer, add some vanilla beans to the mass as well.

Cook on a pan, previously coated with some butter for a few minutes, until the color gets to a golden brown. Make small balls and set them aside to cool on a baking sheet, which should be buttered to easily take them off without the balls crumbling under pressure.

Once they are cool, pour the reserved syrup over the balls, and proceed to darken them in the oven (broiler function on). It can also be done with a chef torch, method that I prefer. Let them cool again and serve.

And I dug into old family notes... Always inspired by the very same posting and I found a version of Chino con piojos! This is a typical sweet made by sugar cane workers, one that I am not sure that still survives in Cuba. Without the seeds, it's called melcocha, plain and simply.

Chino con piojos

Two cups of molasses
The white of one egg
Juice of a lemon
One cup of white sugar

Mix all the ingredients with water and cook until it becomes a somewhat dense syrup, let it cool. Twist it into corkscrew bars and sprinkle with toasted sesame seeds.
