The recipe is from the very Cuban Three Guys from Miami's "Cook Cuban". It's a very simple, delicious breakfast dish--butter custard or ramekin dishes, fill about 1/3 of the way with sofrito, gently break two eggs on top, add a little more sofrito and dust with sweet paprika and a little butter, salt & pepper to taste and and bake at 375 for 15-20 minutes depending on how runny you like your eggs. Serve with warm buttered pan cubano.
